Is everyone thawing out from the ridiculous cold? I spent yesterday doing a whole lot of nothing- can’t complain! My mom did come over and brought Niko, though. Benson seriously followed him everywhere, but was always on the prowl. He would jump and hide in places so Niko couldn’t get him, and then they eventually just laid down next to each other.
I got in a fantastic workout yesterday, too. I completed 6 miles with some exercises thrown in. I’ll be sharing it next week! I have found that if I run a bit and then get off and give my toe a break, I can go longer. I made sure to refuel after my workout Tea, water, and Gatorade. Mmm.
After putting it off for several weeks, I decided to run to the mall to return some things. It’s 1/2 mile away, so I didn’t really go far (I drove, btw). Everything was right in the mall, including the Target I needed to return to. Having Target in the mall is both a blessing and a curse! haha I really did have the entire day to myself because Aaron started his next semester of grad school classes, and they went until 8:00. I was more than ready for some company by that point.
Enough about me, how about this recipe. This is one of my favorite meals these days. If we went to an Italian place, I would always order Fettuccine Alfredo. To this day it’s my favorite pasta dish. But, lately I feel like some restaurants aren’t living up to my potential (maybe I have a high standard?).
If you are anything like me, though, pasta is from a box, and the sauce is from a jar. I’ve had Alfredo sauces, but they are never rich and creamy, and never taste as good as they could be. I always thought making it from scratch would be an extremely long process, and much too complicated for me. I finally gave it a go, and after making it a few times with some adaptations, here’s my take on Crab Meat Fettuccine Alfredo.
