Today is day 2 of Christmas Cookie Overload! In case you missed it, or didn’t see the recipe as I had some technical difficulties!, make sure you check out the snickerdoodles from yesterday!
Before we get to the next delicious cookie, we should probably discuss a workout.
This week I wanted to focus on my favorite moves, in a Tabata style workout! There’s a few ways you could do this workout. You could choose to do each of the 4 circuits as a Tabata, so it would be about a 20 minute workout with a minute break in between each.
Another way you could do this is to mix and match different exercises to create your own Tabata, choosing 4 exercises (and doing them twice) or choosing 8 exercises and doing them each once.
The last way, and perfect for days you want to just target one area, is to choose one body circuit and perform each exercise as their own Tabata. For instance, you would do Mountain Climbers 8 times, making it 4 minutes, then move on to the Burpees. Each circuit would then take between 16-20 minutes, and you could do a few to make one intense workout session!
I love workouts that have variety, and considering these are all my favorite exercises (most I love to hate…) this is perfect!

Now that we have finished discussed a workout, let’s move on to the part you are all here for. These cookies are new to me, but they are beyond ah-mazing. Who doesn’t love a nice cup of Hot chocolate this time of year? What’s better than combining Hot chocolate and cookies!
These cookies are also soft, and adding the marshmallow on top makes you forget you are eating a cookie, and believe you are sipping on a hot beverage.
There will never be a time I don’t make these during the holidays because they just scream a winter snack. I topped mine with even more chocolate chips once they came out of the oven, and some had sprinkles for more holiday cheer. Really, you just can’t go wrong with this one. Enjoy!
Hot Chocolate Cookies

- 1 cup unsalted butter
- 1 cup sugar
- 2/3 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 3 1/4 cup flour
- 4 packets hot chocolate mix
- 1 tsp Salt
- 1 1/4 tsp Baking Soda
- 1 cup Mini Semi- Sweet Chocolate Chips
- 30-35 Large Marshmellows

|Preheat oven to 350. Line cookie sheets with Wax paper, or grease them.|
|In a mixing bowl, mix sugars and butter until light and fluffy. Add in the eggs, one at a time, and the vanilla.|
|Carefully add in the flour, hot chocolate mix, baking soda, and salt.|
|Once dough has formed, add chocolate chips. I use my mixer, but feel free to fold them into the dough.|
|Once dough has formed, roll balls about 1 inch and place on the cookie sheets. Bake for 7 minutes.|
|Immediately bring cookie pans out, and top cookies with pre-cut marshmallows. Place back into oven for an additional 3-4 minutes, until they have started to melt.|
|Remove and place on a cooling rack. *These do take some time to cool. I simply put the trays in the fridge to allow them to harden, before freezing them.|
