Hi there Fit ‘n’ Cookies readers! My name is Katie and I blog over at Daily Cup of Kate where I write about food, fitness, and finding balance and happiness by taking life one cup of coffee at a time. I live in Madison, WI with my fiancé and pup and am currently planning a big fat party (AKA a wedding) that’s approaching fast with a due date of September 13th (editor’s note: Cannot wait to hear all about it- you are going to be gorgeous!). Besides preparing for a wedding, you can find me running the trails, biking around the lake or trying out a local craft beer downtown (hey- all in moderation, right?)
I was thrilled when Heather asked me to write a guest post for her while she is on yet another vacation (jealous!). Like Heather, I am a big health and fitness enthusiast and love sharing my workouts and recipes with others. Today I am sharing one of my go-to recipes that’s quick and easy to make:
· 1 1/2 cup rolled oats
· 1/3 cup chocolate chips
· 1/2 cup honey
· 1/2 cup peanut butter
· 2 tablespoons flaxseed
· 2 scoops vanilla protein powder
1. Add all ingredients together in a mixing bowl
2. Mix well until all ingredients are combined
3. Keep mixing
4. Mix a little more
5. Divide mixture into little balls (mine were about as big as a tablespoon)
6. Let chill in fridge for at least 30 minutes although 60 minutes would be better if you can wait that long…
