Even though she is miles and miles away, I know we would be best friends if we lived near each other. Jessie is the sweetest, and most positive person I have ever met! Even when things happen that would probably make anyone else upset, Jessie has a way of turning it around and learning from it! I am so happy she is writing a guest post for you! P.S. First things first, thank you Heather for reaching out and asking me to write a guest post while you’re on vacation! I can’t begin to explain how honored I feel to be filling in for you today J
If you aren’t already familiar with Heather and her blog, you should know that besides being an absolute sweetheart, she’s honest & so full of life. Unfortunately we’ve never had the opportunity to meet in person (one day it’ll happen!), but by just reading her blog daily, I already feel as if we have. Between the life stories and recipes, heather also shares awesome workouts on Tuesday’s. Does anyone else think she should become a personal trainer?? (side note: It is something that is seriously on my mind! I would love to do it!)
When Heather first asked me to write, I’ll be honest, I didn’t have the slightest idea what I’d even talk about when I agreed, Ha! Should I share how my life has changed since moving to Kuwait? A workout? Some type of deep discussion? A recipe?
It wasn’t until I was fooling around with spaghetti squash the other day that it hit me. Why not share a new type of recipe with all of you. Besides, we can never have too many recipes can we?
So with that being said… it’s time to wash our hands, pull our hair up, put on an apron (if you want) and get busy in the kitchen. On today’s menu; Spaghetti Squash Bread with Vegetarian Meat
Spaghetti Squash Bread with Vegetarian Meat
Serves 10: 125 calories per slice
· 1 whole spaghetti squash, cooked & deseeded
· 6 slices vegetarian meat (I only had “salami” so that’s what I used)
· 6 whole eggs
· ¼ cup mozzarella cheese
· ½ teaspoon oregano, basil, pepper, garlic, and paprika
· ¼ cup olive oil
· Preheat oven to 400 degrees F. Spray a bread pan with non-stick cooking spray
· Combine cooked spaghetti squash, 5 slices of vegetarian meat, mozzarella cheese, spices and olive oil in medium bowl
· Pour into bread pan and smooth out evenly
· Pour eggs on top
· Bake 25 minutes; cover with aluminum foil and bake for another 5-10 minutes
