Easy breakfasts make the mornings flow much better, and are key when life gets busy. Switching things up for breakfast helps to stay out of a rut, as well as shocking your body a bit.
A few weeks ago, I was looking for another option besides oatmeal that could be easily packed and ready to go. Enter: Ham and Egg breakfast cups.
These tiny muffin sized cups are perfect for breakfasts, or snacks, which I have been enjoying them for. They are packed with protein, and leave you feeling nice and full.
Ham and Egg Breakfast Cups
I won’t lie; it’s really not much of a recipe because it can be customized to your liking. Don’t like ham? Place some turkey down instead. Don’t want any meat? Just use egg instead!
Ingredients for one:
2 pieces of Sliced ham
1 Egg, scrambled
A bit of green onion scrambled.
Piece of turkey bacon cooked until crisp
Spray the muffin pin for as many as you would like to make.
In each cup, place two pieces of ham overlapping one another. I found it works best with very minimal hanging over the edge.
Place a pinch (or whatever you wish!) of cheese at the bottom.
Scramble an egg, and mix in some green onions before pouring it on top of the ham.
Note: it’s ok if it goes around the ham into the dish
Place some more green onions and cheddar cheese on top. Garnish with a little bit of turkey bacon. I cooked 2 pieces and it was plenty for 8 cups that I made. You can use as much or as little as you wish.
Bake in the oven at 325 for 20-25 minutes. Keep an eye on them so you don’t burn the edges like I did
I love these because they are so customizable. I am eager to try mixing new things in and see what turns out the best. When I first showed my dad a picture of these, we had just gotten done talking about calorie bomb food choices. He immediately told me this looked awful for you, and was determined that there was a muffin in there. No worries, I proved him wrong!
