Before I get started, I have to wish a BIG Happy Birthday to my big bro. He turns 25 today! I can’t believe it, but he is such a great big brother. We are only 17 months apart, and I would have it no other way. We are so close, and have the best times together. I miss hanging out with him everyday, but he is always there for me whenever I need him. So lucky he is apart of my life, and can’t wait to give him his gifts tonight!
These cookies have the perfect hint of cocoa to them, and with the addition of Oreos, they taste amazing.
Covered with powdered sugar, what could be better? It’s like a fresh blanket of snow covering the roads, making you gaze in perfection at these beauties. These cookies will satisfy all cravings, and leave you wanting more. I have had rave reviews on these cookies because of the tad change of texture. The soft pillowy cookie gives way to some crunch with the Oreo crumbles.

Oreo Crumble Chocolate Crinkle Cookies

- 1/2 tsp Vanilla Extract
- 2 Eggs
- 1 1/4 cup Sugar
- 1 stick Unsalted Butter
- 1/4 tsp Salt
- 1 1/2 tsp Baking Powder
- 1/2 cup Unsweetened Cocoa Powder
- 1 2/3 cup Flour
- 1/2 cup Confectioner's Sugar
- 14-16 Oreos
|Preheat oven to 350 degrees and coat 3 baking sheets with Coconut Oil Spray, or any Spray|
|Beat butter and sugar together until light and fluffy.|
|Add in one egg at a time, until blended, and add in vanilla.|
|Mix the flour, cocoa, baking powder, salt in the same bowl. Scrape sides to mix it all together.|
|In a food processor, or with your hands, can of soup, etc., crumble up the Oreos. Mix those with the rest of the ingredients.|
|Roll dough into semi small balls. No more than 1 inch wide. Roll balls in powdered sugar, or sprinkle the powdered sugar on them while on the pan. Make sure they are about 2 inches apart on the cookie sheet as they do crinkle up and spread!|
|Bake for 10-12 minutes, until they have crinkled up! Feel free to add some more powdered sugar to them once they come out. Let them cool for a few minutes.|
Also, I forgot to give you all an update yesterday. I went to the Dr on Monday, where he checked out my toe and it looks good. I am allowed to wear any shoes that are comfortable, but still to remain off of it as much as I can. The swelling is going to be the main problem now, though it hasn’t swelled up to this point yet. It definitely hurt worse yesterday but I think I did too much on Monday (just getting out of the house, heading to the doctor, etc.). I’m not going to lie, this is hard. It’s hard reading all these blog posts about staying active through the holidays. It’s hard knowing I can’t enjoy all the festivities that are going on. It’s hard sitting on the couch and letting others do things. I want to get up and enjoy the snowfall outside. I want to go to the mall just to look around. I want to enjoy this time, and I feel like it’s just passing me by. Obviously I completely understand I’m being overdramatic, and it hasn’t even been a week, but this is what I am currently dealing with. I headed back to work just for the morning, mostly to get me out of the house. Today is a pretty good day all things considering, but just wanted to stay real with you!
