I won’t even lie, I was pretty excited about this shot!
I’m pretty excited to share a new recipe with you all! I recently received a package of Monitoba Hemp Hearts through my partnership with SweatPink. I didn’t want to just do the same thing as always and throw them on smoothies or oatmeal. I wanted to try a new recipe, and thankfully, Hemp Hearts actually has tons of recipes on their website! I scoured the website and found some pancakes that looked delicious. Let’s be real, who doesn’t love some pancakes?!
Hemp Hearts actually have tons of benefits to them. Hemp is called a “super food” for good reason! They also have contain 10 grams of plant-based protein and 10 grams of Omegas. They even have more protein and omegas and less carbs than the same serving of chia or flax. Making Hemp Heart Pancakes just makes sense! I mean, who doesn’t want to use these? I tweaked the hemp heart pancakes just a bit, but they were fantastic. I was so excited to finally have a healthier pancake recipe that tastes just like the fluffy, not so good for you, kind! The taste was spot on, and I loved the addition of vanilla to it.
Hemp Heart Pancakes
Hemp Heart Pancakes

- 8 oz Hemp Hearts (1/2 cup)
- 1.5 Tbsp Olive Oil
- 1/2 Cup Whole Wheat Flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 Tbsp Honey
- 2 eggs, slightly beaten
- 1/2 cup Vanilla Greek yogurt
- 1/2 cup water
- 1 Tbsp Vanilla
Makes 11 pancakes, using 1/4 cup batter for each.
|Mix together Hemp Hearts, flour, baking soda, baking powder, and salt in a bowl.|
|In a separate bowl, whisk together eggs, Greek yogurt, honey, vanilla and water. Whisk in oil. Add to dry ingredients and mix with mixer or blender.|
|Heat griddle or pan over medium heat. Spray with Non-cooking spray, and add 1/4 cup portions. Cook until bubbles appear, then flip, about 1-2 minutes per side. Enjoy with any toppings you desire! Powdered sugar, syrup, blueberries, apples; possibilities are endless!|
This recipe makes 11 pancakes if you use 1/4 cup batter for each.

How my workouts looked last week:
Tuesday: 5 Mile Run. I did this outside in the morning and was just loving it. The weather was perfect, my legs felt good. I love runs like this!
Wednesday: Interval Sculpt
Thursday: 5.4 mile run- 45 minute Tempo Run. I did a warm up mile at 7.0 on the treadmill (I went to the park to run but it was just too windy and cold!) then I bumped it up to 7.3 for the tempo run, and cooled down with about a mile left. My knee was bothering me at times, but nothing major.
Friday: Rest Day
Saturday: 10 mile run. This went well! I took it cautiously slow, or at least I tried to. I wanted to just make sure my legs had it in them to finish 10 miles, and wanted to also make sure I didn’t over do it. I felt like it was long, and I was getting a bit bored, but I felt great throughout it. Now I just need to knock quite a few minutes off for my race in 2 weeks!
Total miles run this year: 556.36 miles! Whoa, I am so glad I have kept track of how much I’ve run It’s fun to look back!
