Can you believe today is the last day of 2013? I certainly can not, and definitely think this year has been amazing. I am hoping for an even better 2014, if that’s possible.
I want to share two things with you today: a workout, and a recipe. Might as well end the year on a high note with a workout, right? I’m hoping to get a run in on the treadmill today! Fingers crossed!
Here’s this week’s workout. I came up with this last week when I couldn’t do much with my toes, and am keeping it at a pretty low intensity. This one left me sweaty and sore, and is sure to be one of my favorites!
Do each exercise back to back with little rest. Complete 10 reps of each exercise, and complete the entire circuit 2-3 times total.
This recipe. Oh, this recipe. I am asked to bring this to 95% of the places I go. Everyone knows it’s my specialty, and it’s just so good. In fact, I made it 3 times last week for 3 different parties (with different people, of course!). It’s easy, and perfect to make for tonight! It’s the infamous… Buffalo Chicken Dip!
I hope you enjoy as much as we all do! Serve with crackers, chips, or pretzels. It won’t even matter because this is creamy, with a bit of a kick to it, and all around one of my favorites.
Buffalo Chicken Dip

- 8-10 oz Hot Sauce
- 8-10 oz Ranch Dressing
- 16 oz Neufchâtel Cream Cheese
- 3-16 oz cans Shredded Chicken
- 1/2 - 1 cup shredded Cheddar Cheese
- 2 bags Tortilla Chips
|Begin by cooking your chicken in a deep skillet over medium heat. Whether you use can chicken or chicken breasts, fry it up the same way. I keep flipping it until it's cooked.|
|While waiting for the chicken to cook, mix the Ranch and Cream Cheese together in a separate bowl. I use a masher, but you can also use a mixer!|
|Once chicken has cooked thoroughly, dump the hot sauce into the dish. Use between 8-10 ounces depending on how spicy you like dips. Let it simmer together for 2-3 minutes.|
|Once the hot sauce and chicken have simmered, pour the Ranch and Cream Cheese mixture into the skillet, as well. Let that cook for 2-3 minutes, until it starts bubbling.|
|From here, you can do a few things. |
- You can cook it at 350 for 20-25 minutes, covering with the cheddar cheese before cooking, and serve immediately.
- You can place it in the fridge to cook later, placing the cheese on top before cooking.
- You can place it in a Crockpot, cover with the cheese, and let it cook all day. In this case, I typically place it on medium for a few hours, and once I see it's cooked, I turn it to low while everyone enjoys it.
