Hello! It’s Nicole from Fruit n Fitness filling in for Heather today. I have been following Heathers blog for quite awhile and am always so excited to read her posts. I love the workouts she shares and have had so much fun reading about her wedding planning.
While Heather is away getting married (side note from Heather: wooo!!!!) and enjoying a cruise I get to spend some time with you. In keeping with Heather’s Fit n Cookies theme I thought I would share a healthy protein cookie recipe with you.
I love cookies! In addition to my love of cookies I try to maintain a healthy lifestyle and sometimes that means finding alternatives to my favorite sugar loaded treats. These protein cookies are a great option for when you need a quick snack at work, before heading to the gym or after a tough workout.
Oatmeal Raisin Protein Cookies:
1 ½ cup oats
1 scoop vanilla protein powder (I used Plant Fusion)
1 tsp baking powder
1 tsp cinnamon (more if you love cinnamon like I do)
1 dash nutmeg
2 eggs (could do 3-4 egg whites)
2 ripe bananas
¼ cup greek yogurt
¼ cup almond butter (I think any nut butter would work)
1 tbs chia seeds
1 tbs ground flax seeds
½ cup raisins
1 tbs chocolate chips/cacao nibs (optional)
Preheat oven to 350 F. Mix together oats, protein powder, baking powder, cinnamon and nutmeg in a medium bowl and set aside. With a blender mix the banana, egg, nut butter and greek yogurt until everything is well combined. Then mix in chia seeds and flax before adding in dry ingredient mixture, raisins and chocolate. Bake for 9 minutes. Please note: these cookies will probably not look done as they don’t change shape or texture.
Of course the first thing you need to do when removing them from the oven is the most important step in cookie baking. The taste test!
These ‘healthy’ cookies are soft, slightly chewy and moist. I think some great things about these cookies are that they are gluten free (if you use GF oats), added sugar free, and provide protein! They are also quick and really simple to make.
Huge congratulations to Heather and Aaron on their wedding, Heather has been planning and preparing for a long time and I’m sure it was beautiful. I hope they have an amazing honeymoon together and can’t wait for the wedding recap and pictures when she returns.
