We all know I’m pretty picky, which makes following other people’s recipes a little bit more challenging. Sometimes I get through the ingredients, and I don’t even know what half mean. Sometimes I go through and I just don’t have one or two.
I have spent months trying to find a recipe for a muffin that isn’t loaded with sugar, and isn’t loaded with ingredients I wouldn’t usually eat. I could just replace one or two things, or buy the ingredients, except if I don’t end up with a result that I love, I know I just wasted my money on those specific ingredients.
In the end, I needed something healthy to turn to for an extra snack. I needed something to turn to when I am hungry, but don’t care to eat something loaded with sugar. With these muffins, I’m no longer left in a panic! I took ingredients I had on hand, and made something out of it! The Healthy Cinnamon Applesauce Muffins have been a huge hit, and I’ve made them numerous times. The best part is that you wouldn’t even know they are healthy! They still have a streusel topping, which is always the best part.

Cinnamon Applesauce Muffins

- 1.5 cups whole wheat flour
- 1 cup oats
- 1 tsp baking powder
- 1 tbsp cinnamon
- 1 cup unsweetened applesauce
- 1/2 cup skim milk
- 1/2 cup pumpkin puree
- 1/2 cup firmly packed brown sugar
- Between 1/8 and 1/4 cup of canola oil
- 1 large egg
- 1 tsp Baking Soda
- 1/8 cup packed brown sugar (For the streusel topping)
- 1 tbsp cinnamon (For the streusel topping)
- 2 tbsp light margarine, melted (For the streusel topping)
- 2/3 cup oats (For the streusel topping)
|Preheat oven to 400 degrees. Combine the ingredients for the muffins. Spray 2 cupcake pans with non-stick spray. Separate the mixture into 15-18 muffins, depending how large you want them. They don't rise too much in the oven.|
|Mix together the ingredients for the streusel topping. Lightly cover the mixture in the cupcake liners with it, before placing in the oven. Place in oven and bake for 20 minutes, or until a toothpick comes out clean.|
I sure hope you give these a try! You could make your own applesauce to make these even healthier. I used an applesauce sweetened with Stevia, only because my store didn’t have unsweetened. The oats will give you long lasting satisfaction, and let’s be real- if I like these, something must be right! (Side note, too, that you will not taste the pumpkin! It gives it a fluffy muffin consistency. I am not a big fan of pumpkin, either, and had no problem polishing off all some of these.)
