In the midst of everything that happened Monday, I think being thankful is one of the best things we can do. I took a break with my Thankful Thursday post, but these are the things I am thankful for this week.
This is lying. It is warmer than 67 and sunny!
I’m thankful for… the fact that it stays light outside until at least 8. This makes my days feel so much longer, and I love it! In the winter, I feel like I can’t do anything past 5 because it’s night. Not anymore!

I’m thankful for… being a substitute teacher for a gym class yesterday. Really, I am thankful for what they are doing with the kids. We all know that in gym class, some students don’t participate. Where I subbed had students do fit stations before the game even started. It was great because they really got exercise in and they were red faced and sweaty by the end! Some stations included push ups, crunches, jump rope, resistance bands, medicine balls, etc. They were intense and I loved jumping in and doing it with them!
I’m thankful for… Crossing things off my to do list left and right! I made an even more detailed to do list, and broke it into months. This way, I just need to tackle the things for April and then I’ll be set! It has allowed me to see what I really need to do, and what can wait, without stressing over it all.
I’m thankful for… Our kitchen is finally back together! Well, sort of. We have the cabinets in, and appliances back. The counter is a make shift one of cardboard, until the new pieces come in in 2 weeks. Some cabinets had knicks in them so they will be replaced, but for now, we can actually do things in it!
I’m thankful for… realizing I really wasn’t eating enough. I know I talked about it here, but I really didn’t try to figure things out. Over the weekend, I realized I had been feeling down right crappy. I had little energy, the smallest things were mountains, and I was in a bit of a bad mood. I decided I needed to see what I was really consuming in a day, so I went back to using My Fitness Pal. I used it during Insanity, and used a different formula for what I should consume. Although I wouldn’t mind shaping up and losing some winter weight, that isn’t my primary goal. After calculating the food I had eaten on Saturday by dinner time, I had consumed 700 calories. Um, I work out 6 days a week, and lead a pretty active lifestyle. It doesn’t take a genius to figure out it wasn’t enough. That was part of the reason I really tried to prep my food for the week. I have been eating more fruits and veggies, and getting protein in throughout the day. My meals have been pretty consistent, but it’s working for now. I actually have been struggling to eat as much as I figured out I needed because I’m not used to it. It just shows me how I had to of been neglecting my body of the nutrients it needs. I have cut out a lot of sugar, and am just feeling great!
