If I showed you what I ate for one day every week, you’d be quite bored because I eat pretty much the same things. For instance, these are always in my lunch.
So, without boring you to death, here is a round up of food I’ve been eating for the last little while! I try to switch things up, but it’s mainly dinners that are different around here. If you are just here for the recipe, head to the bottom!
Here we go…
Most days I have a bowl of oatmeal with cookie butter on top. That’s pretty much the staple during the week. On the weekend I like to mix things up. Sometimes cinnamon rolls with eggs and bacon, or an egg sandwich (my new favorite). Sometimes it’s half a bagel with turkey bacon and eggs (mixed with salsa and cheese, of course!).
Most days lunch is a sandwich, or leftovers. Sometimes I spice it up and make a big bowl of pasta salad on Sunday to eat throughout the week. It’s a way to sneak in my veggies Or I make a pizza on a Flat Out bread.
My dinners are switched up every week as you can see with my weekly meal plan.
Taco salads are my favorite, especially when I make salsa chicken, or tacos. We always have extras, so this is another way to sneak in my veggies, and I love them! This week we’ve had spaghetti squash with meatballs- so good! I need to get my hands on a few more spaghetti squashes. We’ve had salsa chicken on tortillas a lot lately, too.
One of my newest snacks has been Vanilla Greek Yogurt topped with Cinnamon Crumble Kashi. Before you tell me I’m late to the bandwagon, hear me out. I ate it every day for numerous years. Then, I had a bad one. Like, so bad even though it claimed it was still good. Since then (like a year ago), I haven’t been able to stomach the smell of it (you all know there is a distinct smell!) let alone eat it. Last week I tried the Vanilla Greek yogurt I have been buying Aaron (from Aldi) and actually didn’t hate it. There was no strong smell, and with the cereal on top, it’s delicious. Now it’s on a daily rotation and I’m so happy about having some extra protein in my life!
And graham crackers with Cookie Butter are on that every day rotation too.. whoops!
And now for the recipe you’re probably here for… Aaron and I have enjoyed this numerous times, and I don’t know why I haven’t shared it before. Sorry the pictures are a little dark; I can’t reheat fish so I had to cook it and take pictures when it was dark dinnertime! Hope you enjoy!
