Not only do I have my workout I completed yesterday for you today, but if you follow me on twitter (@fitncookies), you saw that I experimented with Quinoa! I made quinoa mac ‘n cheese, which I thought turned out really well, and wanted to share!
First up: Workout
I did this workout yesterday on my treadmill. I was sweating with the incline! It felt good to play around with the incline and the speed, and as the speed increased, the incline decreased, which was much needed! I felt like it all moved pretty fast and I was done before I knew it. Let me know what you think! Feel free to adjust the speeds down or up by 0.5!

As always, let me know what you think!
Next up: Recipe
I have been hearing great things about quinoa for some time. I always wanted to try it, but never got around to it. I ended up spending way too much time on Pinterest on Friday night, and saw many pins for quinoa. I decided to experiment for lunch yesterday and make a sort of mac ‘n cheese. I like mine really cheesy, but this one was not. I would definitely add more, and perhaps different cheese next time. I also left out veggies. I meant to add them in, and then forgot until it was in the oven Oh well, next time!
Feel free to change things up, add different veggies, add spices to it, make it your own! Let me know if you try new things so I can try it next time, too.
This makes a lot of mac ‘n cheese. I forgot that quinoa would expand a lot when it cooked. I expected to maybe have one cup of leftovers, but ended up having only 1/8 of the pan GONE! At least I know my lunch for the next few days!
- Quinoa: love or hate? Hopefully loving it now!
- Mac ‘n cheese: love or hate? I LOVE mac ‘n’ cheese. Could probably live off of it! My mom, however, hates it, so we only make it when she’s not home!
